A former supermarket now serves as the site for the new Dassai Blue Sake Brewery in Upstate New York.
Jun Mitsui & Associates in collaboration with Pelli Clarke & Partners has unveiled the new facility, situated in the Hudson River basin’s Hyde Park. The 8,338 m2 (90,180 sf) complex comprises three buildings: the brewery (housed in the converted supermarket space), a rice milling building, and a wastewater treatment facility.
Inspired by principles of Japanese architecture, the main brewery structure contains a covered porch area extending the length of the building with tin eaves. This design feature enables the interior space to extend into the outdoors, opening to the natural surroundings. In addition, full-length windows line the front section of the structure, offering views of the landscape, leading visitors into a sake-tasting space. Further, the brewing section occupies the center of the building complete with large viewing windows of the production area.
Covered with Yakisugi charred cedar siding, the rice milling structure offers visitors an outdoor landscaped area with numerous seating areas amongst surrounding cherry trees.
Construction on the project was provided by Consigli Construction. Additional project members include MEP engineering by Fitzmeyer & Tocci, structural engineering by Gibble Norden Champion Brown, civil engineering by Chazen Labella, and landscape architecture provided by Chazen Labella.
