Hav & Mar: New York’s plywood-clad multicultural culinary destination

Hav & Mar is a new multicultural culinary destination in the Starrett-Lehigh building in Chelsea, New York City’s arts district.

Hav’ means ‘sea’ in Swedish, and ‘Mar’ means ‘honey’ in Ethiopia’s Amharic language.

The multicultural theme extends to the mermaid motif created by artist Derek Adams for the restaurant’s logo and the prominence of women of color at the helm.

Design firm Atelier Zébulon Perron chose plywood as a material base for Hav & Mar’s unique character. Plywood is applied to walls and boundaries and used to build assemblies for harnessing lighting fixtures. It was also used to frame the restaurant’s private booth enclosure.

The interiors are in earthy tones of brown and honey, contrasting with light marble. Plush velvets, rich walnut, and other hardwoods contrast with raw stucco and concrete.
